Nutella Banana Bread

Not sure how I first got the idea to eat frosting out of the can. But I do remember this: the summer I was 13, I was hired as a part-time babysitter for my neighbors. I loved playing with the kiddies for those few hours each day, but looked forward to nap time, when the tots were tucked away for an hour or two. That was when I could indulge in my little secret: a treat tucked in the very back of the pantry just for me. I would whip out a can of Betty Crocker chocolate fudge frosting and a spoon and delight in the pure sin of eating it straight up, no chaser. As I grew up and my taste buds got more sophisticated, my guilty pleasure morphed into a jar of Nutella. What a dangerous habit to have. Now I dare not risk having any on hand without good reason. This gorgeously gooey banana bread, laced with luscious Nutella through and through, seems like reason enough to me.

an ode to avocado

Rich and creamy, buttery and lush, my infatuation with the avocado continues. I’m obsessed with finding new ways to incorporate it into everything I eat. And because there’s an avocado apocalypse rumored to be hitting next year (due to this year’s extreme drought in the west) I’m borderline frantic about enjoying them now while I can still get my hands on them! Here are three delicious ways to show these jewels some love: a zingy green goddess dressing, blended with avocado and packed with fragrant herbs; luscious avocado hummus for dipping, zesty with cumin and fresh cilantro; and avocado toast, my new go-to snack of lightly mashed avocado piled high on crusty country bread. My beloved avocado, oh how I worship thee! Let me count the ways….

Ricotta Lamb Meatballs with Gochujang Marinara

With all the information we’re bombarded with lately about eating well and sourcing responsibly raised/grown ingredients, I have been gravitating toward consuming less meat. I don’t think I’ll ever become a full-fledge vegetarian–I enjoy fresh fish and chicken too much. And this dairy girl could never forswear cheese in pursuit of veganism. But once in a while I do partake of red meat and my flesh of choice is lamb. I love its distinct flavor and the many ways it can be prepared. This is my new favorite version: delicate, savory meatballs, made with creamy ricotta and spices, which are baked then gently braised in a spicy tomato sauce with a distinctive kick. Light as air and a mouthful of flavor–if I’m going red, I could eat a dozen.

Grapefruit, Fennel & Avocado Salad with Baby Kale

The thaw is finally happening. Days are getting longer and temps are trending warmer. I’m trying to spring back to life too. I look forward to gentler days of soft breezes, baby blossoms and new beginnings. Grapefruit is one of my favorite things: a day without it is like a day without sunshine to me. This salad, composed of winter’s tenderest ingredients, is tasty and invigorating: delicate and tangy grapefruit segments pair with fragrant fennelbuttery avocado and soft baby kale. All is tossed with a mouthwatering grapefruit honey vinaigrette. It’s my spring whisperer.

Baked Eggs with Leek & Tomato and Candied Bacon

Still not feeling up to par these days, I’m seeking solace wherever I can find it. Breakfast has always been the most comforting meal to me and so integral to how I feel for the rest of the day. Even when I’m at my best, I’m generally not a morning person: I prefer to start my day slowly, lingering in bed, gradually working my way to conversational mode. When I have the luxury of time, I’ll laze about enjoying a hearty breakfast, a strong cup of coffee, and the sunday paper spread out before me. This morning menu—part elegant, part hedonistic—tops my list right now for gratifying fare. The gently baked eggs are delicate and delectable and then… There’s. That. Bacon. Sticky and spicy and sweet, oh my. No better way to ease into the day.
